Elves were in Ultimas 1-3, and a couple of minor references in later Ultimas (I had the idea of Elves for UO back in 1999).

Samurai/Ninja and Tokuno were references to Ultima 1 (Lands of the Feudal Lords) as well as Magincia being "Asian" in one of the later Ultimas.
